Staves are the long slender lengths of wood that are used to form a barrel. Typically, those slices of oak are air-dried for 6 months, the air-drying process called curing. In this case, the oak was dried for 13 months. The result is a delightfully complex Bourbon with less spice and more citrus and dried stone fruits. The caramel shimmers on the finish but is fruit tart and dried cherries that grab all of the attention.
